# Directions:

01 - Arrange 8 clear cups with 6 to 8 ounce capacity on a work surface for layering.
02 - Dissolve red gelatin in 1 cup boiling water, stirring constantly. Add 1/2 cup cold water and stir thoroughly. Distribute approximately 2 tablespoons of mixture into each cup. Position cups at a slight angle using a muffin tin as support and refrigerate for 45 to 60 minutes until fully set.
03 - Sprinkle unflavored gelatin over 1/2 cup cold water in a clean bowl and allow to bloom for 5 minutes. Pour 1/2 cup boiling water over gelatin and stir until completely dissolved. Mix in sweetened condensed milk and allow mixture to cool to room temperature before proceeding.
04 - Once red layer has completely set, gently pour white mixture over top, distributing approximately 2 tablespoons per cup. Set cups upright and refrigerate for 45 to 60 minutes until firmly set.
05 - Dissolve blue gelatin in 1 cup boiling water, stirring thoroughly. Add 1/2 cup cold water and stir well. Cool mixture to room temperature before layering.
06 - After white layer has firmly set, carefully pour blue gelatin over white layer, using approximately 2 tablespoons per cup. Refrigerate cups upright for a minimum of 2 hours until all layers are completely set.
07 - Top each cup with whipped cream and fresh berries immediately before serving.

# Expert Suggestions:

01 -
  • They look restaurant-worthy but come together in about 30 minutes of actual work.
  • You can make them up to two days ahead, which takes the stress out of party planning.
  • Kids and adults both go crazy for the vibrant colors and jiggly texture.
  • Completely gluten-free without any fussing or special ingredients.
02 -
  • Rushing the layers is the number one way these cups fail, so resist the urge to skip ahead no matter how ready you think you are.
  • Cooling each gelatin mixture to room temperature before pouring prevents it from melting into the layer below and turning everything into a muddy swirl.
  • Those white layers sometimes try to pull away from the red if you pour too vigorously, so pour slowly and let gravity do the work.
03 -
  • If your white layer seems too thick, you can thin it slightly with a splash more boiling water before it cools, but do this before it sets because fixing it after is nearly impossible.
  • The sweetened condensed milk is non-negotiable for that creamy layer, but if you absolutely need dairy-free, coconut milk mixed with a tablespoon of sugar gets you most of the way there.
