# Expert Suggestions:

01 -
  • Everything cooks on one pan, so cleanup is just a quick rinse and you're done.
  • The lemon and herbs make the fish taste bright and restaurant-quality without any fancy technique.
  • It's filling and healthy enough that you can eat it guilt-free on a weeknight.
02 -
  • Don't skip patting the fish dry, or the marinade will just slide right off and pool on the pan.
  • Make sure the green beans are in a single layer and not piled up, or they'll steam instead of roast and lose that crispy texture.
03 -
  • Let the marinade sit on the fish for a few minutes while you prep the beans, it helps the flavors soak in deeper.
  • If your green beans are thick, give them a quick blanch before roasting so they cook evenly with the fish.
